Spicy Korean Pork Taco with Soy Lime Vinaigrette

Serves 4.
How to Make It
- In a small mixing bowl, combine gochujang, Korean chili flakes, soy sauce, sugar, garlic, ginger, and corn syrup. Mix well.
- Use very thinly sliced pork shoulder with a little marbling. If you can't find pre-sliced meat, ask your butcher to slice into ⅛″ thickness.
- Add the gochujang mixture to the meat.
- Toss together so the mixture coats the pork. Disposable gloves come in handy.
- Heat oil in a skillet over medium heat. Place the pork and sliced onion on top. Let them sizzle for 1 minute.
- Stir-fry the pork and onion until fully cooked.
- Meanwhile chop all the topping ingredients (lettuce, tomatoes, onion, cilantro).
- In a mixing bowl, whisk together all vinaigrette ingredients until emulsified.
- Build a taco with tortilla, pork, and toppings. Sprinkle shredded cheese on top if you like.
- Drizzle soy lime vinaigrette over the tacos and serve immediately.
